One of my daughters favorite meals is chicken and dumplings. While I don’t mind it, I’ve always found it lacking in flavor. This is my spiced up version with fresh garlic and ground thyme, it has our whole family going back for seconds.
I recommend adding peas and carrots, that’s how I like mine. My husband thinks adding anything besides chicken and some form of dough is sacrilege. So, I have to make mine on the side.
I also like to top it off with a little bit of parm cheese.
Garlic Thyme Chicken & Dumplings
- 1.5 lbs Chicken Breast
- 2 Cans Cream of Chicken Soup
- 1 Can (10.75 ounce) Chicken Broth
- 1 8 pack Can of flaky biscuit dough
- 1 Medium Onion (diced)
- 1 tbsp Butter
- 2 Large Cloves of Garlic (coarsely chopped)
- 1/2 tsp Ground Thyme
- Crack Pepper to Taste
- Parmesan cheese (Topping)
- Peas and Carrots (Optional)
Place chicken breast, cream of chicken soup, chicken broth, onion, butter garlic, thyme and pepper in the crock pot.
Cook on low 6-7 Hours or High for 3-4. Remove chicken from the crock pot and shred with fork. Return to crock pot.
Cut or rip biscuit dough into bite size pieces. Place in crock pit and cook an additional 1-1.5 hours. (Add Peas and Carrots here if you’re using them.)
Serve with Parmesan to taste.
